Tuna Cakes

Once upon a time I had a recipe for tuna cakes that included bread crumbs and mayonnaise.  Clearly those days are over!  I’ve played with this recipe over the last couple of years and here’s one version I really like.  If you’re not an onion fan, try using shredded broccoli.

Tuna Cakes

2 cans tuna (I used flaked, in water)
2 tbsp Dijon mustard
1 medium shallot, chopped finely
1 egg
1/2 cup almond flour/meal (plus an extra 1/4 cup set aside)
Salt and pepper to taste

Mix all ingredients together (except the extra almond flour)
Shape into patties
Roll patties in extra almond flour to make a crust
Melt 1-2 tbsp in frying pan over medium heat
Fry patties for 5-6 minutes
Turn over and cook for another 2-3 minutes (depends on how brown you want the crust to be)
Serve over salad or side dish of your choice
